Mace and nutmeg are two distinctly separate spices, derived from the same plant. Ceylon Mace (Myristica) is the bright red lacy covering of the nutmeg seed. Nutmeg and mace have similar taste qualities, nutmeg having a slightly sweeter and mace a more delicate flavour. Mace delivers a spicier aroma and flavor. It is used in lighter dishes, which allows it to impart a yellow hue to the base sauce.
